1 tsp cornstarch
2 tsp low sodium soy sauce
1/4 cup water
1 tbsp apple juice concentrate
1 lb. green beans, trimmed
Grated peel and juice of 1/2 lemon OR lime
1 pimiento, julienne cut
1 (4 oz) can water chestnuts, drained
2 tbsp chicken stock

Combine cornstarch, soy sauce, water and apple juice concentrate in a small bowl and set aside. Steam green beans with lemon juice and peel and steram 6-8 minutes till crisp tender,drain. In a large skillet or wok, stir fry beans, pimiento and water chestnuts with stock. Add cornstarch mixture and ciik till thickened ,stirring. Makes 6 servings
