This is a recipe we just tried a few weeks ago and really enjoyed it. It's a way to get oatmeal into someone that doesn't necessarily like oatmeal !:D
1 1/2 cups quick cooking oats
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp granulated sugar
1/2 tsp salt
2 cups buttermilk
4 large egg whites
2 tbsp melted margarine
In a bowl combine first five ingredients. In another bowl combine buttermilk, egg whites and margarine; stir into the dry ingredients till smooth. Bake in a preheated waffle iron till golden brown and stays in one piece. Makes 6-8 waffles
