3/4 lb. frozen escalloped apples (Stouffers)
3 eggs
1/2 cup milk
2 Tbsp sugar
1/2 tsp. vanilla extract
1/8 tsp. cinnamon
6 raisin English muffins, split
1/4 cup plus 2 Tbsp unsalted butter
Prepare escalloped apples according to package directions. Combine next 5 ingredients in a shallow dish. Place 4 muffin halves, cut-side down, into egg mixture and let stand 1 minute. Turn to coat remaining side. Melt a portion of the butter in a heavy nonstick skillet over medium high heat. Working in batches, place muffin halves in skillet, cut-side down. Cook 8 minutes, turning once, or until browned. Repeat with remaining muffin halves and butter. Serve with apples. Serves 6
