Pecans are a good source of oleic acid, Vitamin B-Thiamin, magnesium, protein and fiber.

Nuts are a part of most universally-accepted balanced diets, such as the "Mediterranean Diet," which includes fish, poultry, vegetables, fresh and dried fruit, nuts, grains, olives and olive oil.

Nuts appear in the meat/protein section of the food pyramid guidelines, established by the U.S. Food and Drug Administration (FDA).

Pecans have such a distinctive and popular flavor "au natural." That flavor is enhanced in the baking process or by toasting before adding the nuts to a recipe.

Like most nuts, pecans contain fat, therefore,it is recommend they be used in small amounts. Fortunately, most of the fat is unsaturated, "the good type," which may help lower LDL cholesterol levels in your blood.

I miss fresh pecans when I lived in Texas. My mil still brings some though.

Freeze shelled pecans as soon as you aren't going to use them. Fridgerate unshelled pecans immediately. They turn stale fast as they lose the moisture and oils that give them flavor. Make sure the containers are airtight. The less dry the shell, the less likely the meat will be to cracking.

I have found that the pecans purchased at an orchard are far better tasting, due to freshness than those at the grocery store.
