1 dressed duck (4-5 pouinds)
1 jar (12 oz) cherry preserves
2 tbsp red wine vinegar
Prick the skin well and place it breast side up on a rack in a shallow roasting pan. Tie the drumsticks together and bake at 325 degrees for 2 hours or till juices run clear and a meat thermometer registers 180 degrees. Cover and let stand 20 minutes before carving. For the sauce, combine preserves and vinegar in a small pan and cook and stir till heated through. Serve with the duck. 4 servings
