2 pounds spinach
1 tbsp butter
2 hard boiled egg yolks
salt and pepper to taste
2 tbsp cream
Cook spinach according to directions for boiled spinach (remove roots and wash. Place in a large kettle without additional water, the water that slings to the leaves is enough. Cover the kettle and cook over low heat till tender. Drain when done.) Chop spinach return to heat add buitter, salt and pepper and stir till butter is melted and then add cream and chopped yolks and mix well.
