I used to make these to bring to school to snack on when I was in Carlsbad.

Low Carb Turkey and Swiss BLT Roll-Ups

4 teaspoons heavy mayonnaise
1 head iceberg lettuce (4 outer leaves only)
1/4 pound sliced turkey (no sugar added)
1/4 pound precooked bacon strips (8 slices)
1 tomato, thinly sliced to make 8 slices
1/4 pound sliced Swiss cheese
Toothpicks

Spread about a teaspoon of mayonnaise on the inside of a large single outer leaf of iceberg lettuce. Place leaf on the counter and top with 2 slices of turkey breast, 2 bacon slices, 2 slices of cheese, and 1 to 2 tomato slices. Roll up like a burrito. Close with toothpicks and cut into pinwheels. Repeat to make 4 roll-ups.
Cook's Note: Try heating all but the lettuce and tomatoes in the microwave, and then roll up in the lettuce for a hot wrap with melted cheese.

Another great snack is wrapping a piece of turkey or ham around a dill pickle spear.

Oh I know! I keep a big jar of bread and butter pickles and dill spears in the refrgerator, but if I eat them with anything else he begins to wonder; a guy thing I guess! LOL

I never craved pickles with any of my pregnancies. I have to buy several jars of pickles when my children come visit because they like them more than I do. I love the kosher type the best.

I know there are numerous recipes out there for Jalapeno poppers, but I wanted to share this one since its very tasty and has no breading to add extra carbs. I made these for guests tonight and everyone loved them. They make great party appetizers. They are also quite filling. I had two of them and some fruit as a meal

Stuffed Jalapeno Peppers

Serving Size: 2 split pepper halves
Makes 4 servings

-= Ingredients =-

4 Jalapeno peppers
2 tablespoons Cream cheese *
1/3 cup Cheddar cheese **
3 Bacon strips; cooked crisp and crumbled

*I used light cream cheese in place of regular
**I used 2% milk fat cheddar in place of regular

-= Instructions =-

1. Cut the stems off the peppers and cut in half lengthwise.
2. remove the seeds and membrane from the inside.
3. Soften cream cheese if needed. In a small bowl, mix cheeses and crumbled bacon together
4. Fill each pepper half with the cheese mix and place in a shallow
casserole dish or on a cookie sheet
5. Bake at 350 for about 18 minutes

Yummy, that is similar to my recipe for Armadillo Eggs except there is no cheddar cheese and I wrap raw bacon around the jalapenos after I fill them. Good to know another way.

I have seen the armadillo eggs recipe and have it on my computer but havent tried it, yet Is the recipe you use the one that wraps sausage around the jalapenos after they are stuffed?

Its on my list of things to try. I try to do at least two new recipes a week, but my try soon list grows faster than I can shorten it =P

Here's my recipe for Armadillo Eggs (http://www.momsmenu.com/forums/showthread.php?t=93). I know when I mention them, others seem to know what I am talking about. However, I don't know if their's are like mine or not. No, mine do not have sausage, only jalapenos, cream cheese, and bacon.

I'll have to retrieve mine and check. I seem to recall the one I have using sausage to wrap around the jalapenos. But then perhaps I am confuzzled :o
