Audrey had a great time at the dance even though she said it was cold as they had it outside.Someone had spilled hot coca on her jacket so one of the young men from our church let her use his hoodie,he told her that he was hot but she could tell he was cold but he refuse to take his hoodie back. Hope you both have a good night!

I am so glad that Audrey had a good time. Was the guy good-looking? If so, it was well worth it. ;) I am glad guys today still have some respect for women.

I so dread tomorrow. It is the beginning of another LONG week! I have an interview on Friday with a Forensic evaluation place. I hope it is all I expect it to be. I need the 3 credits next semester so I am hoping that it is. I will have to drive the 10 or 15 miles to the Texas border. lol However, excluding Thanksgiving break, we only have 3 weeks of school left. I am terribly anxious as I am not ready to take my GRE exam for graduate school. I have been doing a bit of research so that I will know what information to give my professors for letters of recommendation. I am feeling a bit overwhelmed. I will be so glad when this whole applying to grad schools process is over. lol

A doctor's son? Cool! I have made bread pudding many times. However, I never use a recipe since I am usually dealing with day old bread. But, with the liquids use a ratio of 2 eggs per 1 cup of milk. Sugar could be a tad bit over a 1/4 cup. I chop the bread into large cubes. Then, I place them in a greased casserole dish. You can add raisins and nuts at this point. In a bowl, I blend together the milk, sugar, and eggs. I pour that mixture over my bread. I then bake on 375 degree oven until it comes out clean like a cake. But, that is just the way I make it. I may even use several different types of leftover breads. Good luck!

Here is a bread pudding I have made; it's been awhile.

24 slices stale French bread( you can use any bread really)
1/2 cup butter, softened

1/2 cup raisins
6 eggs
1 1/2 cups sugar
1 tbsp vanilla
2 tbsp cinnamon
1 tsp salt
4 cups milk, scalded

1/2 cup dark brown sugar, firmly packed
1/4 cup water
3 tbsp bourbon(you can use rum flavoring if you want no alcohol)
1/2 cup butter, softened

Spread one side of bread slices with softened butter. On a large baking sheet place the bread slices in a single layer with butered side up. Toast in oven for about 8 minutes or till brown. Remove from oven and put bread slices in a shallow 2 qt. baking dish. Scatter the raisins over the top and set aside. In a large bowl beat the eggs, sugar, vanilla, cinnamon and salt together well with a whisk. Gradually add the scalded milk, whisking till combined very well. Pour over the toasted bread. Press the bread slices down into the egg- milk mixture and let stand 2 hours. Press the bread back down into the mixture several times during that time. Place this casserole into a larger pan and place on one of your oven shelves.Pour boiling water into the larger pan halfway up the sides of the casserole. Bake at 350 degrees about 1 hour or till golden. Remove from the water bath onto a wire rack. Prepare the sauce by combining the brown sugar, water and bourbon into a small saucepan. Bring the mixture to a slow boil. WIth a whixk beat in 1/2 cup of butter till it is melted. Pour some sauce over the puidding. Serve the rest for others to pour "extra" on their serving. Serve warm. Serves 8

Sometimes I would make a hot caramel sauce,other times a chocolate sauce;
my grandmother even made a lemon sauce sometimes for bread pudding. It really just depends on what you like!

Hope this is what you wanted. I also have a recipe for a Chococlate Bread Pudding, a Brandied Raisin Custard Bread Pudding, an New Orleans Style Bread Pudding. If you would like any of those just let me know!

Hope everyone had a good day today!

DeBora, does your recipe contain sour cream, mashed potatoes, and sauerkraut? If that is sort of how you make yours a pork roast would go good with it! And heck, even a regular ole roasted turkey; or are you wanting to do something different than turkey? I'm sure I can give you some other ideas; just let me know!

Hope you day went well yesterday Sweetnell and yours too DeBora! We stayed home most of the day yesterday; went to English early and got back home because of all the rain. The doctor called with test results on DH and they still aren't good so they are trying something different before more surgery. Still unknown on the cancer. So we will have to sit and wait" longer. I told the doctor just the "C" word is nerve racking, but he explained all the procedures and why we are going the route we are which makes very good sense once you have all the factors. Still the "C" word bothers me!

Am going to try and go to Jasper maybe today, but even though it is still dark out I can hear the creek bed we cross to get out flowing big time, so I'll have to drive down to he end of the drive at daylight and see if we will be going or not! LOL More rain to come today also, so our plans may be ditched today!

So if we stay hom ....again; maybe I can catch up on posts! LOL Have a good day!

Sweetnell, on the substituting splenda for your MIL, I would first talk to her and see if there is one that works well for her to be sure it is one she can have. If you do use Splenda in this recipe you need to use the Splenda Sugar Blends for baking; the substitution would be: for the regular 1 1/2 cup sugar use 3/4 cup splenda sugar blend for baking; for the 1/2 cup brown sugar use 1/4 cup splends brown sugar blend for baking. These amounts would be different if you just used plain splenda.Good Luck!

Cat, did you know that you can scroll down to see what others have posted while in reply mode?

My pierogi lasagna recipe does not have sauerkraut or sour cream. It is pretty basic. It has potatoes, lots of onions and butter (or oil), cheddar cheese, salt and pepper, and lasagna noodles. I won't be serving the pork roast until Thursday. I don't plan on making turkey on this trip. I am making the pierogi lasagna casserol on Monday and plan on making it ahead since I have to take my DD to the doctor on Monday in Roswell and it will be an easy, pop in the oven when I get home, type of thing. I hope I have made since for you.

Cat, I am sorry about the bad results on your DH. I hope everything works out better for him.

Nell, I hope you day went well. Audrey is one busy girl. Tell her hello for me. What is your DS doing these days?

Well, I need to hurry and catch up on posts as I have to tutor a student within an hour.

Yes I know I can do that, but I usually just go to my email notifications and read my emails that way, so I end up doing one post at a time. And sometimes I end up back where I've already been to answer something. I've been so busy lately I keep falling behind in all my emails. Seems I get them down close to 150 and next time I look I have over 300! LOL

I am glad everything is going well. I am to rush off to stuff a few court cases for tomorrow's role play in criminal procedural law; I will be Clarence Thomas. lol

Here's the recipe. I thought I had it posted somewhere, but I don't. I got it from FC and it is delicious!

Pierogi Lasagna

12 lasagna noodles
1/3 cup vegetable or canola oil
5 onions, finely chopped (approx. 3 cups)
1/2 tsp. pepper
1-1/2 cups cheddar cheese, shredded
6 cups mashed potatoes, seasoned

Preheat the oven to 350 degrees. Cook the noodles and set aside. In a skillet, heat the oil. Sauté the onions until golden and place 1/2 cup of the onions aside. Make the mashed potatoes and add the onions (except the onions that have been placed aside), pepper and cheese; mixing well. Coat a 9x13 baking dish with non-stick spray. Place 3 noodles on the bottom then spread 1/3 of the potato mixture over them. Continue this process making three layers of potatoes and 4 layers of noodles. Spread the remaining 1/2 cup onions on the noodles. Cover with foil and bake for 30 minutes or until heated through.

NOTE: You can add some sliced mushrooms or even 1 cup of drained sauerkraut.

Nell, that is good news about your bil. I like this lasagna. It takes very much like pierogis.

I am on my way to an interview to forensics evaluations firm for a field experience class. I will be tutoring for 2 hours as soon as I get finished there. Then, we have role play for the US Supreme Court in criminal procedure class. Unless another student can get a babysitter between 2 and 6, I will tutor her at about 9pm. It is against my rules, but she needs it. Depending on how late I am finished, I will be going home either tonight or in the morning to Carlsbad. I need a break in the worst way!

I hope everyone else is doing well.

Nell, I am sorry about your friend. Enjoy your banquet, if you go. Sounds like you got a little make-over. I bet you feel better too.

I went to the interview and I will be taking this class once I spend one morning observing. It is a counseling and day rehab for the moderate to severe mentally ill adults. Once I spend time observing, after Thanksgiving break and I feel that I can handle this, I will sign up for the class, which is field experience. I have decided to leave in the morning to Carlsbad since it will be 9pm when class gets out and I will probably be tutoring a student after that.

I hope everyone has a wonderful weekend!

Spent the whole day with DS2 and DIL. DH got to "help" DS with a couple of small projects while DIL and I went shopping for the backing material for the curtains. Gopt them all done and hung by 8 last night. Since it was so late DH and I ate at a resdtaurant called Rafferty's. A nice sit down place that he could get a meal almost within his guidelines. While we were at DS2"s house DS1 came by and visited a bit so we got to see them both.

I was planning on picking up my fresh vegetables for Thankdsgiving Day, but it was so late when we got done I didn't feel like doing that. So tomorrow we will go to Jasper and pick up what we need. I hope to miss the grocery store rushes! LOL

Nell, poor Audrey, I got out the entire week this week!

I hope everyone is enjoying a wonderful holiday week!

I got another email from one of the pre-psych majors that volunteer in the lab. I had already told him that I would be out of town this week. My professor cancelled 2 meetings last week he had with me and another girl as well as the entire lab. However, he mentioned that he wanted me to get things prepared for data analysis and agreed with me that I should move them to another computer so that it wouldn't interfere with my subjects coming in to run studies. However, I got yet another email from this kid asking me if I could meet with him today! I decided that since I told him, and forward the same email to the professor and the lab manager, that I would be out of town for Thanksgiving, I would not answer it. Then, a few minutes ago, I got an email from the professor to this kid telling him to forward that email to me and ask me for what hours I am available on Tuesdays and Thursdays. The kid forwarded the email and asked if today at 3 would be fine. I have decided to not answer it until after Thanksgiving. When I do answer it, I will copy and paste the orginal email stating that I would be out of town. I will also email the professor about what is going on, since this is all news to me as to what is going on. I have 12 subjects already lined up for Monday and Tuesday.

Sorry, I am just upset that we are all supposed to be on Thanksgiving break and I get all these emails, even though I stated that I would be out of town. Grrr

My DH and DS are on their way back from Midland, TX. his plane got in a little over an hour ago. The GKs are awake and are eating eggs in the basket. I hope everyone has a great holiday.

DeBora don't you know not only men have selected hearing but also selected reading. They read only what they want to read! So don't let it spoil your holiday, enjoy your time with your family. Audrey has a partice this afternoon then karate.Tomorrow her favorite cousins are coming in so hopefully she'll get to spend time with them.Cat hope your day is going well. Hope both of you will have a good afternoon!

DeBora4BobbyL

Nell, I knew about the selected hearing. But, I figured that these highly intellegent males could at least read black and white text! Grrr! I have just decided to wait until after Thanksgiving to think about it and worry about it more. I just poured out my feelings and then I feel better. Thanks for listening.

I hope Audrey has fun at practice. Enjoy the cousins and Thanksgiving.

Cat, I hope your day is going well as well.

I got my pain specialist's secretary who sets the procedures to put me on a quick call list so if there are any cancellations, she will call me asap. That will be nice. DS came and it is difficult to get DGD to settle down to take a nap since he is also full of energy! DGS is so whiney. He was up screaming most of the night and then he awakened very early. He was in a good mood this morning and even played well. DH went down for a nap about 30 minutes ago since he is working the graveyard shift. He took the DGS to bed with him and he was so tired that he didn't fight it. lol I think with him taking an earlier nap and not sleeping until noon, he should sleep well tonight.

Last night I made chicken enchiladas and peirogi lasagna. We were going to have chicken and dressing casserole tonight, but since we have so many leftovers, we are going to have that instead.

I hope everyone else is having a terrific holiday weekend.

I started getting things together today to cook tomorrow; going to go ahead and have a regular Thanksgiving meal at home. DeBora, I'm confused! LOL The only drive-in that comes to my mind is the drive-in movies; that isn't what you are talking about is it?

The drive-in movies have never left Carlsbad. Plus, they are making a big come back. So, yes, we are talking about the movies. If you ever come to Carlsbad, go to Fiesta Drive-In (http://www.fiestadrivein.com/). Most tourists know about the Caverns, but not about our drive-in movies that have been written about in magazines. We usually grill hamburgers and wrap them in foil and take an icechest of soft drinks and have a blast. This will be especially difficult for me as Jet-Bo loved to go to the movies as does Poncho. So, this will be my first without Bo. Tonight, I think we will see Escape Clause.

Nell, if ever emotion could be transferred to text, it sounds like you had fun!

I hope everyone enjoyed their Thanksgiving. I spent most of it preparing to apply to graduate schools. Tomorrow is a better day for us as DH will be off and DS wants to take pictures. He could do that today as most places were closed.

Got the DVD palyers for 19.99 this morning and then mailed the packages and came home. Digging a 35 foot long trench 18" deep to take some electric to the barn. Have to do that part today and the next couple days before rain comes so talk to you all later! Have a good evening!

Just dropping by to say hi! Hope everyone is having a good weekend! The weather here has been beautiful; high in the 60's so we've taken advantage of it and done some outside projects! Talk to you all later! I haven't been getting post notifications all weekend; has anyone else had the problem?

Cat, I haven't had any problems getting notifications.

Has anyone seen Nell? Oh wait, I just noticed that she is online. lol

I hope everyone had a terrific weekend. I just got back to Cruces from Carlsbad. I am relaxing and watching Titantic, which is on TNT. I have been wanting to watch that for awhile. I also have to finish writing down information for my professors for letters of recommendation for graduation school. I am really bumming about my break being over.

Take care all!

Been working on some security lights most of the day. Had a wiring problem it turns out, one fixed ,and will look at the other tomorrow in between vet visits!

It is supposed to be cold here by Friday morning; they are even calling for that white stuff! Hope they are wrong!

Good luck to you DeBora and Audrey, you too on returning to school. So,etimes I thinkI would have more time if I was in school, because I run out of time right now! LOL

Have a good evening everyone!

Cat, you can keep all that cold and all that white stuff. lol

Nell, you sure sound like you are going to be busy these next few weeks.

Today it rained here, which is a rarity. lol We even got some miled hail. The hailed looked like those dippin dot icecream. lol I have been worried about Bonte since he is over 12 weeks old and still has not testes. Well, tonight, I notice that one has just about dropped and another is on its way! I was so afraid that he would have to have major surgery to be neutered.

I have a major headache today. I do have an appointment to have my nerve block on the 2nd of January. That will be nice, but it seems so far away. I got ahold of my old boss from Carlsbad, who retired not too long ago, and found out he is moving. I am not sure if he is going to write my letter of recommendation or not since he is quite old and forgot he promised he would write it. He even said he would be happy to write it. I have emailed my old advisor to see if he will write some on my behalf. He won't look as good on paper as the boss since he is not a professor and nor is he a doctor. However, he does know me as a student and if the boss forgots or misses the deadline, I won't be out of luck.

Well, better catch up on emails. I am ready to go to bed.

Nell, tell Audrey I will be thinking of her as we count down to the end of the semester or Christmas break!

We usually make a huge batch to have one day with gravy and then the next day fried with a butter (not real crisy). They are a real stomach filler! :p

Sweetnell, you could always get a USB memory stick to store your files on. Or an external hard drive that plugs into a USB port. That way you wouldn't "clutter" his hard drive.
