This recipe is from The Greenbrier Resort in White Sulpher Springs in West Virginia
5 pounds potatoes, peeled & sliced
2 cups whipping cream
2 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
6 eggs, lightly beaten
3 1/2 cups shredded parmesan cheese
Rinse potatoes with cold water and place in a large pan. Add cream, garlic, salt and pepper and bring to a boil. Reduce heat and cover and simmer 30 minutes or till potatoes are crisp tender. Remove from heat and stir in eggs and 2 3/4 cup of the cheese. Pour into a greased 13 x9 x 2" pan. Sprinkle with remaining cheese and bake uncovered at 400 degrees for 25-30 minutes or till tender. 12 servings
