The regular recipe for this calls for cooking onions in bacon fat; this one is different!

4 medium potatoes (1 1/4 lb total)
1/2 cup onion, chopped
1/4 cup water
1/2 cup cold water
1 tbsp all purpose flour
1 tbsp sugar
1/4 tsp celery seed
1/4 tsp salt
1/4 tsp pepper
3 tbsp vinegar
1 tbsp cooked bacon pieces
1 tbsp parsley, snipped

Peel and slice potatoes and cook them in boiling water 15 minutes or just till tender. Drain and set aside. In a saucepan cook the onion, covered in the 1/4 cup water 4 minutes or till tender. Do not drain. In a small bowl gradually stir the 1/2 cup cold water into the flour till smooth. Stir mixture into the undrained onion in the saucepan. Stir in the sugar, celery seed, salt and pepper. Cook and stir till thickened and bubbly. Stir in the vinegar. Carefully stir i nthe cooked potatoes abnd bacon pieces. Cook 2 to 3 minutes more or till heated through stirring gently. Transfer to a serving bowl and sprinkle with parsley. 4 servings
