I'd like to have one night a week be "sandwich night" since it would give me a speedy dinner option, which I need sometimes with summer here.

I know that for me and the kids, it's not a problem. But my DH works hard all day, and I don't feel like a sandwich is a very nice dinner to come home to (sometimes he skips lunch).

I know that other families do have a "sandwich night." What kinds of easy side dishes do you pair with your sandwiches to round out the meal?

Having a sanwich night is an excellant idea. I don't think DH would go for it unless Sloppy Joes were involved. LOL He won't do breakfast for dinner either. I think he is a fuddy duddy. lol

I think sandwiches are wonderful, especially in this heat. I have made a roast spread out of leftover beef or pork roast. I add whatever I have on hand like mayo, celery, apples, or nuts, seasoning, and so on. Wraps can also be made as well.

I am planning on a sandwich/soup night too.

For the days when its just too hot for soup, you could always do a cold soup---my family would dis-own me if I did this to them, though :p

I would opt for some kind of salad---garden, potato, brocolli, macaroni....

and then some kind of fresh fruit included in dessert.


It's the same way with my husband....a regular little sandwich wont hold his appetite so I'm thinking along the lines of grilled chicken with lettuce and tomato on a hearty bun, pasta salad and watermelon or cantaloupe. Also, I cant go wrong offering ice cream for dessert! ;)


Since we have the A.C. going inside most of the time, I still cook a lot of soups, just smaller amounts since I am serving sands. too.


You can always have a "baked potato bar" where they can prepare their own potato to go along with their sandwiches.

My DH wants me to make Cracker Barrels hashbrown casserole very soon so I will probably pair it with the French Toast on a Friday but it would also go good with sandwiches.

Those are wonderful ideas. I can have soup anytime and anyplace. I think that is the most comforting food in the world. As soon as Sept/Oct gets here, I think I want to do the soup and sandwich thing. They go so well together.

we have sandwiches frequently. i use leftover poultry or beef to make hoagies. we also microwave lean ground beef & use it for sloppy joes, taco filling & whatever comes to mind

We do sandwiches quite a lot; especially when I'm just too tired to cook. With the summer heat we do our supper a lot of times around 10 or 11 PM after it has cooled off from the hot day. So sandwiches work great then. I usually do potato sald, macaroni salad or coleslaw with them. Pickles, olives, hot peppers, lettuce, tomaotes as salad toppers. Then some type of fruit pineapple with cottage cheese, or peaches and pears. So it rounds out like a regualr meal as long a you have plenty with them. Thanks goodness DH doesn't mind as long as he has enough variety to go with them!

With summer coming up fast again, this is a good time to plan these kinds of meals. I like "regular" sandwiches but I also do things like sloppy joes, chicken patty sandwiches, egg salad, hoagies, chicken salad, etc.

What I like to serve with these things: potato or macaroni salad, mac and cheese if it's something like chicken patty sandwiches, soup, fries... anything that seems to go with with it. Something like pasta salad is great, too.

:) I have soup and sandwich nite, quite often. The challenge comes when those of us, who are vegatarian, want new and different kids of sandwiches. So we usually end up haveing a vegatarian soup and meat sandwiches. :D

When we have sandwich night I usually have coleslaw or potato salad. Sometimes I will make mac and cheese to go with them or baked beans. I love having sandwiches for dinner.

We really like to eat grilled cheese sandwiches and soup, and I'm glad the weather's going to be cooling down so we'll be able to enjoy them again. I just can't get into soups very much during hot weather.

We love soup and sandwiches also and don't eat soup much in the hot weather because we don't have AC so it makes it rather hotter to try and eat soup then!

Oh yes soup and sandwichs is big in the cooler weather in our house also. We really like the grilled cheese and tomato soup nights.

WE are a grilled cheese and tomato soup family too.
We also like to do heated tuna subs with tomato soup.
And of course, there's toast and chicken noodle soup. I don't know why but I really like cinnamon toast and chicken noodle soup.

We have been doing the homemade Subways again lately. I make a copycat Sweet Onion Sauce and we have all the veggies ready in separate containers and buy some hoagie buns. We usually do the ham and turkey breast. I buy those at Sam's in the "whole" form and super thin slice it! Pretty good and much cheaper than buying them at Subway! LOL

We just got a paninni grill and love it. Using nice rolls and several types of meats (turkey, ham, salami) and a cheese (pepper jack is a fave) with a salad or fresh cut up veggies alongside, makes for a decent evening meal. Very fast, easy to change up according to what you have on hand ... what's not to love?? I'm not much on cold sandwiches myself, but a hot grilled one is a whole 'nother story.:cool:

We eat sandwiches sometimes. I almost always use left over meat. In fact, I specifically make a dinner that we can have sandwiches the next day. If I make chicken, I make enough so we can have chicken sandwiches. If I make beef, I make enough again so we can have sandwiches. I'll add some kind of sauce, BBQ, teriyaki, something to change it up just a bit. I'll use left over sides also, both hot and cold. You can have rice or potatoes with sandwiches. You can also have any type of cold salad.

Here is a simple and quick one!

Baby BLT's

Spread toast points with mayonnaise and top with Roma tomato slices, arugula, and bacon.

Cat lover, what a cute idea!!!

I always think I want to make BLTs or Turkey Clubs, but as soon as bacon is cooked in this house, the vultures come along and eat it up!

Chicken and Pineapple Sandwiches

1 8 oz can crushed pineapple, drained
1 cup chopped cooked chicken
2 cups walnuts, chopped
1/2 cup salad dressing or mayonnaise
24 slices desired bread, buttered
combine pineapple, chicken, walnuts and salad dressing. Spread between buttered slices of bread. Remove crusts and cut each sandwich into quarters. Makes 4 dozen small sandwiches.

Yard Long Sandwiches


1 1 pound loaf French bread
1/3 cup soft butter
8 slices bologna
8 slices American cheese
2 medium tomatoes
2 dill pickles cut lengthwise into slices

Cut the laof into 1 1/4" slices almost to the bottom crust, but not through. Hollow out alternate sections of the loaf almost to the bottom of the crust. Do not cut through crust. Spread the butter in hollowed out sections. Place the following into each buttered cavity: one slice of each, bologna,rolled,one slice of cheese folded in half, one slice tomato and one slice pickle. Put on a baking sheet and heat in a 400 degree oven for about 10 minutes. To serve slice the loaf between the filled sections to make 8 sandwiches
