View Full Version : Scrambled Eggs Alfredo Bake

1 cup bisquick
6 tbsp margarine
1 egg
1.4 cup onion, chopped
1/4 cup green pepper, chopped
1 jar (4.5oz) sliced mushrooms, drained
12 eggs, beaten
1/3 cup crumbled cooked bacon
3/4 cup Alfredo sauce

Heat oven to 400 degrees. Spray bottom and sides of a 8 x 8 x 2" pan with nonstick cooking spray. Mix bisquick and 4 tbps margarine till crumbly. Gently stir in 1 egg and set aside. Melt remaining 2 tbsp margarine in a skillet and cook onion, green pepper and mushrooms till crisp tender. Add 12 beaten eggs to vegetable mixture. Cook, stirring occasionally till eggs are set and remove from heat. Gently stir in bacon and pasta sauce. Spread in baking pan and sprinkle with bisquick mixture over the eggs. Bake uncovered about 15 minutes or till topping is golden.

I like anything with pork fat and onions. Is that a green bell pepper or a spicy pepper?

I used a sweet green pepper, but I don't know why you couldn't use a hot one.

Thanks for clarifying. In NM pepper can mean anything and it usually isn't sweet. lol

I usually say bell pepper or sweet pepper for the kind that you was talking about. I cook with several types of peppers, but jalapenos are my favorite.

Have you ever used habenoro (sp)? My DS #2 loves them , but I can't eat them; too hot for me! LOL

Habanero chiles are very, very hot! They are okay, but I like chiles that enable me to still taste the flavor of the food. lol But, they are sold everywhere here. I believe chile peppers are the largest growing crop in NM. I don't know about other places, but in NM, you buy your bags of chiles inside the store, and then there's a place outside that, for a price, will put them in a huge roaster and roast them for you. At least that's the way it is in Las Cruces, which is near Mexico.

Oh that would be so nice to be able to buy a bag and have someone roast them right there on the spot!

The people who are usually lined up for them are either Mexican, Mexican-American, or a similar culture.
