Baked Spaghetti Squash Lasagna Style

cooking spray
1 spaghetti squash
1 onion, chopped
2 tbs. minced garlic
2 (14 oz.) cans stewed tomatoes
1 tbs. dried basil
1 cube vegetable bouillon
black pepper to taste
1 (15 oz.) can black olives, chopped
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese

Preheat oven to 325º. Spray a 13X9 inch baking sheet with a thin layer of cooking spray. Cut spaghetti squash in half lengthwise, and remove the seeds. Place cut side down on prepared baking sheet. Bake for 35 minutes in preheated oven, or until a knife can be easily inserted. Remove from oven and cool. You could also cook it in your preferred method.

Meanwhile, spray a non-stick saucepan with cooking spray. Sauté onion and garlic until golden brown. Stir in tomatoes, basil, bouillon cube, and black pepper. Cook for about 15 minutes, or until you have a medium thick sauce.
Remove squash strands with a fork. In baking dish with a spoonful of sauce, a layer of squash strands. olives, and mozzarella. Repeat layers until all of the ingredients are used. The last layer should be squash, sauce, and Parmesan cheese.
Bake for 20 minutes, or until Parmesan cheese melts.

I personally add extra mozzerella cheese on top.

Oh that sounds good! I wanted to try and grow some ,but haven't gotten the seeds in the ground, so it might be too late to try this year! Wouldn't it be great to go pick them and have sooo many!

Cat, my DH doesn't plant his seeds until July. I don't know when you are supposed to plant them for your area, but I usually get the spaghetti squash from DHs garden in the fall.

I might go ahead and give them a try! Wouldn't hurt anything and maybe I'd get some from it. How do you know when they are ready to be picked in the fall?

DH tells me that it is like anything gourd family, like watermelon, cantalope, and summer squash, when you give it a slight twist and it easily comes off the vine, it is ready. He said that if you gently twist it and it wants to stay attached, it isn't ready even if it looks like it's ready (e.g. size and color) I hope this helps as he's the garener in the family. He doesn't eat the veggies and I do, but I don't garden and he does. lol

Tell your DH thanks for the information! I do most of the gardening; while I'm weeding my DH is usually going ahead ogf me and watering so that helps! But he eats more of it than I do, we both love veggies and some nights our supper is all veggies!

I told him. That is great that you both work together gardening. I'm just not the outdoor type.

I got a chuckle out of your reply; since we live in the middle of the woods by ourselves we'd be out of luck if we both didn't like the outdoors, but that is wh ywe moved here.

I was out a 1/2 hour ago because one of the dogs down by the egg layer coop was going crazy over something. When I got down there (I forgot my flashlight and didn't have my gun with me either) there was a horrible smell; like a wet dog but 10 times worse! I couldn't see anything but heard something walking into the woods away from me, which was good because it was just me! So I guess you have to like the outdoors because I'm always having to go out and check whatever is out there. I also set a live trap every night near where my free range chickens roost. So it is an interesting life we enjoy.
