8 cups water
1 pound dry navy beans
1 onion, diced
1 1/2 cups celery, chopped
1 bay leaf
1 tsp Italian seasoning
Rinse and sort beans. Put beans and 5 cups water into a large pot and bring to a boil; boil 10 minutes and turn off heat and let sit 1 hour. Add remaining 3 cups water, onion, celery, bay leaf, and Italian seasoning. Bring mixture to a boil and cover, leaving the lid slightly open, reduce heat and simmer 3 to 4 hours till beans are tender. Check several times during cooking and add more water if necessary. Makes about 8 cups soup
