This is one of my great,great aunt's recipes; I remember her fixing this when I was small; I have her really old cookbook with her notes in it which is so:cool:


6 hard cooked eggs
2 cups thin white sauce
8 slices toast
salt and pepper
paprika

Separate the yolks from the whites of the eggs and chop the whites very fine, and add to the white sauce,with salt and pepper,paprika. Arrange six slices of toast on a platter and pour over them the white sauce. Press the egg yolks through a sieve and scatter over the top. Cut the two extra slices of toast into small triangles and arrange on a platter and garnish with parsley.

It makes a nice presentation for company and isn't hard or take a long time to make.

Eggs Au Gratin


6 hard boiled eggs
salt and pepper
grated cheddar cheese
buttered crumbs
2 cups medium white sauce

Remove the shells from the eggs and slice the eggs. Arrange the slices on a greased baking dish. Season to taste with salt and pepper and pour the white sauce over the top. Sprinkle with the cheese and cover with buttered crumbs. Bake at 350 degrees till the sauce bubbles and the crumbs brown a little.

What is a 'white sauce'?

Donna,

White sauce is béchamel sauce or one of the French mother sauces. However, you might be more familiar with it as a white gravy. lol

This is a very basic recipe for white sauce, this one will make about 2 cups which is what you need for the above recipe.



White Sauce

4 tbsp butter
4 tbsp all purpose flour
2 cups milk

In a small saucepan over medium heat melt butter. Add flour and stir till the butter and flour are well combined. Pour in milk and stir constantly as it thickens. Add more milk depending on desired consistency. You can make several different "thickness" of this depending on what recipe you are using this in. You can also add cheese(shredded) to this to malke a good cheese sauce.
