These are good with a salad and some red beans and rice!
1 pkg. (8 oz) cream cheese, softened
2 cups shredded cheddar cheese
1 pkg. (8 oz) imitation crabmeat, flaked
8 flour tortillas (10")
salsa
In a bowl combine cream cheese and cheddar cheese. Stir in the crab, Spoon down the center of each tortilla and roll up tightly and place in an ungreased baking sheet. Bake at 350 degrees for 20 minutes or till heated. Serve with slasa. 4 servings

I LOVE crab. I bet I could have these if I use low-carb tortillas and reduce the recipe. DH won't eat crab.

I've fixed them and just refrigerated them a couple of days and took them for lunch when I worked and heated them in the micro at work.

I just noticed that it has imitation crab meat. That is one of those things that I will not eat. I'll substitute the real deal. Now I am starving for crab and shrimp! Since DH isn't here, I can eat all I want! I'm sure within the next 2 weeks the cyinide l(sp) evels will go up in my body! LOL

I'm sure it will taste even better with the real stuff! Here in our little town there is no hope of getting "fresh" seafood. That is something I miss in the city, we had a little fish shop that had everything flown in fresh every day!

I can't get it fresh here either. However, I can get it frozen.

hehehe; had to laugh at that because we can't even get it frozen here! I asked one time about some fish locally and I was told" "Well you live 5 miles from Patoka Lake; how much more fish do you want"! LOL

Yes the country life is enjpyable, but everyone ought to get a chance to try and shop for awhile in these little country towns! LOL

I lived in a town of a 1,000 for years. It was just like "Mayberry." I remember when we first got a convenience store. We thought we had hit the big time. Then, we were really big city when they put a flashing red light at the main interesction in town because they had built the interestate about 18 miles out and travelers might not know to stop. There are still streets (6 blocks by 6 blocks total) that don't have stop signs. But, they still have that 1 flashing light. LOL

I know what you mean, when we bought our property here several years ago, the "Mayberry" police office was big compared to what was here, they've since gone modern though on that. We still don't have any traffic lights here, in fact we have to go at least two towns in one direction to even get the flashing caution light! If you pass five cars on one road we consider it a traffic jam! LOL But I really do enjoy the peacefulness of it!

My grandfather was the deputy sheriff in "Mayberry" when I was little. So, he had keys to the city hall/police station. We were there having our pictures taken because my aunt and uncle were photographers. My cousin was told to turn the lights on. The "lights" were how the ambulance pr tornadoes were warned back then, depending on how many sirenes were blown. Within minutes, were had the town's EMTs at threre. LOL

We don't have pictures of the EMTs, but we do of all the families. I had empitigo (sp).
