1/2 cup uncooked brown rice
2 cups water
1 tbsp wine vinegar
water
4 cloves garlic. chopped
4 stalks celery, chopped
1 green pepper, chopped
1 carrot, chopped
1 bay leaf
1 small can stewed tomatoes
1 tsp dry oregano
1 tsp dry basil
1/4 tsp cumin
Put the brown rice on to cook. Put vinegar and water in a heavy skillet and add garlic,celery,green pepper, carrot, and bay leaf; add enough water to steam the carrot and cover. When carrot is soft add stewed tomatoes, oregano,basil and cumin. When the rice in the other pan is done add it to the vegetable mixture;lower the heat and simmer 15 minutes. Makes 1 serving
