This isn't one if you eat low fat, but it is good; especially over biscuits!


1/4 cup bacon drippings
4 rounded tbsp all purpose flour
1 tsp salt
1 tsp pepper
1 28 oz can tomatoes, chopped
1 16 oz can tomatoes, chopped
1 tbsp sugar

Heat bacon drippings in large cast iron skillet. Combine flour, salt, and pepper and sift over the drippings. Blend well stirring often to keep the mixture from sticking, and cook over a medium heat. Add the tomatoes to the flour mixture and stir well. If this is too thick add a little boiling water. If it is too thin add a little corn starch mixed with water. Reduce the heat to low and keep warm; serve. Makes 6 servings

Your tomato gravy is different than mine. I love to put mine on meatloaf. I believe that it was on one of Tyler Florance's shows on the Foodnetwork.

Tomato Gravy

1/2 cup extra-virgin olive oil
3 garlic cloves, chopped
Pinch red pepper flakes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
1 tablespoon fresh thyme leaves
2 bay leaves
1 onion, diced
1 carrot, finely chopped
1/4 cup red wine
2 (28-ounce) cans whole peeled plum tomatoes
Pinch sugar
Salt and freshly ground black pepper

Heat olive oil in a large saucepan over low heat. Saute the garlic, red pepper flakes, and herbs for 2 minutes until the herbs are fragrant and garlic is golden (but not overly brown.) Raise the heat to medium, add onion and carrot; cook for 5 minutes until they breakdown and are soft. Deglaze with red wine and reduce to evaporate the alcohol. Hand crush the canned tomatoes and add to the pot, along with its liquid. Add a pinch of sugar to cut down on the acidity from the tomatoes; season with salt and pepper. Let simmer for 30 minutes, uncovered.

I don't use that one on my meatloaf, for that I just mix some Italian seasoning and garlic into tomato sauce and pour it over the meatloaf at the sstart of baking it; I put the meatloaf on a rack so the fat drains off into the pan and this leaves sort of a gravy "crust" I guess you could callit.

I like tomato with my meatloaf. My MIL uses ketchup, which I find gross. However, I like the tomato gravy or tomato sauce that is seasoned on mine.
