This is one of those dishes you can even fix for supper and get away with it if your family doesn't like breakfast for supper!
1 cup seasoned bread crumbs. divided
2 pkgs. (10 oz each) frozen chopped spinach thawed and squeezed dry
3 cups (24 oz) small curd cottage cheese
1/2 cup grated parmesan cheese
5 eggs
Sprinkle 1/4 cup of the crumbs into a greased 8" square baking pan. Bake at 350 degrees for 3-5 minutes or till golden. In a bowl combine spinach, cottage cheese, parmesan cheese, and three eggs and remaining crumbs. Spread over the bread crumbs. Beat remaining eggs and pour over spinach mixture. Bake uncovered at 350 degrees for 45 minutes or till knife inserted in center tests clean. Let stand 5 minutes before seving. 9 servings.
