View Full Version : Asparagus & Mushroom Frittata

1 tsp butter
1 tbsp olive oil
2-1/2 oz fresh asparagus, trimmed and cut into 1 inch pieces
2-1/2 oz fresh mushrooms, sliced
2 eggs
1 teaspoon water
1/4 tsp chopped fresh thyme
1 tbsp freshly grated
Parmesan cheese
2 tbsp and 2 tsp shredded mozzarella cheese

Preheat oven to 325 degrees. Melt butter in an oven-safe skillet over medium heat. Stir in olive oil and asparagus, and cook until the asparagus is tender, about 10 minutes. Stir in the mushrooms, and continue cooking about 5 minutes. In a medium bowl, whisk together eggs, water, and thyme. Pour into the skillet, and reduce heat to low. Cover, and cook 5 minutes. Transfer the skillet to the preheated oven. Bake 10 to 15 minutes, until eggs are no longer runny. Top with Parmesan cheese and mozzarella cheese. Turn on the broiler, and broil until cheeses are melted and lightly browned.

I'll have to try this when I go home as the RV stove is too small to cook frittatas.

Have you ever used an electric skillet; put a wire rack in it and then set a skillet in it that has oven proof handles ( Ilike cast iron for this) and it cooks like an oven. Of course you usually have to cut the recipe size down, but it works.

Problem is I don't have an electic skillet and I don't have any space to put any more stuff. However, I'll be out of school by July 1st and will be able to go home and make all I want.
