The Waffle

1 cup white, unbleached all-purpose flour
1 tsp vanilla
1/3 tsp ground cinnamon
1 medium egg, separated
1 cup orange juice with calcium
1 tbsp grated orange peel
1/4 tsp cream of tartar
1/4 tspwhite granulated sugar or Splenda

The Topping

1 cup applesauce
Juice of one orange

In a medium to large mixing bowl, sift together the flour, and cinnamon and add egg yolk, orange peel gratings (zest), orange juice, vanilla and beat to make a smooth batter. In another bowl, whisk or beat the egg white with the cream of tartar until it forms stiff peaks. Fold this into the batter. When ready, lightly spray oil on waffle maker, place 1/2 cup to 3/4 cup on your waffle iron depending upon size, press down to spread batter around and cook.

To prepare the topping, combine applesauce and juice of an orange and heat over low heat, stirring occasionally.
