1 1/2 cups all purpose flour
1/3 cup sugar
1 tbsp baking powder
1/4 tsp salt
2 cups corn flakes cereal
1 cup skim milk
1 egg
1/4 cup vegetable oil
1/4 cup preserves or jam
nonstick cooking spray
Stir together flour, sugar, baking powder and salt. Set aside. In a large bowl combine corn falkes and milk. Let stand 2 to 3 minutes or till cereal is softened. Add egg and oil. Beat well. Add flour mixture stirring till combined only. Portion evenly into twelve 2 1/2" muffin cups coated with nonstick spray. Make a deep indent in top of each muffin and fill with a teaspoon of preserves. Bake at 400 degrees about 18 minutes or till golden. Serve warm with cream cheese. 12 muffins
