If you are baking and the recipe calls for a few tbsp of liqueur, you can use orange juice or apple cider or a tbsp of vanilla extract plus water to make up the difference. In a custard sauce just omit the liqueur and stir in a pinch of spice or orange zest.

When you deglaze a pan with wine, you can use an equal amount of chicken broth. To brighten the flavor add a tbsp of lemon juice for every 1/2 cup wine that's called for.

If you don't have Maderia fo that recipe; Sherry, Port, Maderia and Marsala are all able to be substituted for one another with good results.

A few other subs if yu don't want to use alcohol in a recipe:

For 1/4 cup red wine, use equal amount red grape juice or cranberry juice. For 1/4 cup white wine, use equal amount white grape juice or apple juice.

I don’t believe there’s a common substitution for Beer, but many other alcoholic beverage substitutions call for using apple cider
