Hiya all!

We went to Max & Erma's the other night and they had a grillin special menu choice going on. It came with a cold potato salad they called "Loaded baked potato" potato salad. It had everything in it that you would put on a loaded backed potato, according to the menu. My mother got this and I tasted it. It was absolutely delicious!

I know it has sour cream in it, and uses red potatoes. I'd love to make some of this for our Fourth of July picnic! Does anyone happen to have a copycat recipe for this or something that sounds close?

These isn't a "copy cat" for Max & Erma's, but sounds like what you are looking for. You can substitute red potatoes for the Idahos in this recipe. Enjoy!

Loaded Baked Potato Salad

4 pounds Idaho potatoes, peeled
1 pound bacon, crisply cooked, and chopped into 1/2-inch pieces (fat reserved, if desired)
4 ounces unsalted butter, softened
1/2 cup chopped green onions
2 cups grated or shredded cheddar cheese
1 1/2 cups sour cream (regular or low-fat)
1 tablespoon black pepper
1 teaspoon salt
Cook whole potatoes in boiling, unsalted water until tender. Refrigerate until chilled, then chop into one-inch pieces.
Transfer the potatoes to a large bowl along with the remaining ingredients and thoroughly combine. Add some of the reserved bacon fat if desired.
Chill at least 2 hours before serving. Adjust the seasoning prior to serving.
Makes 2 quarts.

Note: Any condiments or toppings typically added to a loaded baked potato may be used for this recipe.

I made it,but I had to substitute fat free ingredients where I could so DH could eat some, but it was still really good. So I'm sure the "real recipe as posted" is going to taste great too!
