Turkey Ratatouille

This is also low carb!


4 tablespoons olive oil
1 pound turkey brats or sausage, in small bit-sized pieces
1 Japanese or small Italian eggplant, cut in 3/4" cubes
1 small zucchini, cut in 3/4" cubes
1 small red pepper, cut in 3/4" pieces
1 cup (4 ounces) sliced mushrooms
2 garlic cloves, minced
1 can of broth
1/2 cup tomato paste
1 teaspoon dried oregano
salt and pepper to taste


Heat the oil in a large skillet over medium heat. Sprinkle the turkey and brown for about 2 minutes. Add the vegetable and continue cooking over medium heat for 5 more minutes, stirring occasionally. Add mushrooms, garlic, tomato puree, broth, and oregano.Mix well. Turn heat up to high and bring to a boil. Cover, reduce heat to low and simmer 5 minutes. Season to taste with salt and pepper.

This sounds good, but think I'm going to give it a try without the meat! I love bratwurst, but the fat content is just unbelieveable!

You can try it with any type of meat.
