1/3 cup buttermilk
2 tsp hot pepper sauce
4 skinless chicken breast halves
1/4 cup seasoned dry bread crumbs
1/4 cup yellow cornmeal
1 tsp salt
1 tsp chili powder
1 tsp dried cilantro
1/2 tsp cumin
1/4 tsp ground red pepper
Preheat oven to 400 degrees. Spray cookie sheet with nonstick cooking spray. Combine buttermilk and hot pepper sauce in a 13 x 9" dish. Rinse chicken and pat dry. Place in buttermilk mixture, turning to coat. Set aside. Combine bread crumbs, cornmeal, slat, chili powder, cilantro, cumin and ground red pepper in shallow dish. Dip chicken in crumb ,mixture turning to coat well. Place chicken meat side up on cookie sheet. Spray with vegetable cooking spray. Bake chicken 20 minutes and remove from oven and spray again with cooking spray. Bake 10 - 15 minutes more or till juices run clear. 4 servings
