16 uncooked Italian sausage links
4 large sweet peppers (use varied colors), julienned
1 banana pepper, julienned
1 onion, halved and sliced
2 tbsp olive oil
8 hot dog buns
In a large skillet cook sausages over medium heat till no longer pink. In another skillet saute the peppers and onions in oil. Drain sausages and place in buns. Top each with pepper mixture. Refrigerate remaining sausages. 8 servings
Italian Sausage Spaghetti
1 small onion, chopped
1 small green pepper, chopped
3 garlic cloves, minced
2 tsp olive oil
8 cooked Italian sausage links
1 can (28 oz) diced tomatoes, undrained
1 can (6 oz) tomato paste
1/4 cup water
1 tsp Italian seasoning
1 tsp sugar
1/2 tsp pepper
Hot cooked spaghetti
In large pan saute onion, green pepper and garlic in hot oil till tender. Stir in sausages, tomatoes, tomato paste, water, and seasonings. Bring to a boil. Reduce heat covr and simmer about 15 minutes. Serve over spaghetti. 5 servings
