Okra Patties

1 pint okra, cooked
1 egg
1 tsp salt
2 tbsp cornmeal
1/4 tsp baking powder
4 tbsp all purpose flour
1/4 tsp pepper

Drain okra and mash. Add egg and beat. Sift dry ingredients together and add to okra and mix well. Drop by spoonfuls into very hot oil and fry till golden, turning once. 6 -8 patties

I will eat okra anyway it is cooked. In October, when I am off the low-carb diet, I will definatly try this.
