This is a Scandinavian Dish; according to legend this is a dish that originated on small ships where the cook had few means available and had to do their best to serve a nourishing meal



2 medium onions, chopped
2 tbsp margarine
2 cups diced cooked beef OR pork
5 medium potatoes, peeled & diced
1 tsp salt
1/4 tsp pepper
4 fried eggs
1 tbsp parsley, chopped

In large heavy skillet, saute onions in margarine till golden. Add diced meat, potatoes, salt and pepper. Cook till mixture is lightly browned, Top each serving with a fried egg and sprinkle with the parsley. 4 servings
