View Full Version : Chicken with Black Bean Salsa

6 boneless skinless chicken breast halves (4 oz each)
1 tbsp fresh garlic, crushed
1/4 tsp pepper
3 tbsp chicken broth
1 can (15 oz) black beans, undrained
1/2 cup salsa
3 tbsp green onions, sliced thin

Rinse chicken and pat dry. Spread each with garlic,and sprinkle with the pepper. Coat a large skillet with nonstick cooking spray and preheat. Arrange chicken in skillet and cook about 2 minutes on each side or till browned. Reduce heat ot low and add broth. Cover and simmer 10 to 12 minutes or till chicken is tender and juices run clear when pierced. Transfer chicken to platter and keep warm. Drain any liquid from skillet and add undrained black beans and salsa. Cook and stir till heated through, Spoon this mixture over the chicken and sprinkle with green onions. I like to serve this on top of cooked rice.
