Graduation cookies or Fortune cookies
1 egg
1/4 c. sugar
2 tbsp. oil
2 tbsp. water
1/4 c. cornstarch
This is the same recipe as fortune cookies. If desired, you can make fortunes and place inside. These are great for graduation parties.
To make cookies, beat egg slightly. Add sugar gradually. Beat until very thick. Add oil slowly. Mix cornstarch with water and a little egg mixture. Beat into remaining egg mixture.
Heat griddle to 350 degrees. Drop batter by heaping tablespoons onto griddle, forming circles. Cook about 5 minutes until set and golden on bottom. Remove from heat.
While hot and working quickly, wrap around a wooden spoon to form a diploma. Let cool. Using ribbon of the school’s colors, tie. Keep in an air tight container. Only cook 2-3 cookies at a time as they harden quickly as they cool.
*To make fortune cookies, place the fortune inside and fold in half. Use a coffee cup to fold in half again.
