Here it is summer time again. Since I am living in an RV during school time and it gets sooooo hot in here, I do most of my cooking either in my crock pot or on the grill outside. My Secret Sister from Family Corner (http://www.familycorner.com/) sent me some cookbooks and this is a recipe that I love so much. It's from Crockpot Cookery.
Cuban Black Bean Soup
3 (15 oz) cans black beans, undrained
2 (14 1/2 oz) cans beef broth
1 (14 1/2 oz) cans diced tomatoes
1 (4 oz) can chopped green chilies
5 oz extra lean fully cooked ham, cut into 1 inch cubes
1 C onion, chopped
3 cloves, minced
1/3 C red wine vinegar
1 t dried oregano leaves
1 t ground cumin
1 t dried thyme leaves
1 t pepper
In crockpot combine all ingredients; stir well. Cover and cook on low for 8-10 hours or on high for 4-5 hours.
*Acidic foods, such as tomatoes and sugar, inhibit the bean softening process, so dried beans must be completely softened before combining with these types of foods.
