This makes a refreshing salad on a hot summer day!
1 3 oz pkg. lime flavored gelatin
1 cup boiling water
3/4 cup cold water
1 8 oz pkg. cream cheese, softened
1 16 oz can peach slices, drained
Dissolve gelatin in boiling water; add cold water. Gradually add to softened cream cheese, mixing till well blended. Chill till partially set and fold in peaches and pour into a 1 quart mold. Chill till firm. 6 servings
