This is a work in process. I will have to wait until DH has green tomatoes to try this again to see if it works. I've been working on this recipe for a year.
Southern Fried Green Tomato Red-eyed Eggs Benedict
2 eggs, poached
1 English muffin
2 slices of country ham or Canadian Bacon
2 slices of fried green tomatoes (can use leftover green tomatoes and heat)
1/2 cup butter
2 egg yolks
1/4 teaspoon salt
2 tablespoons leftover coffee
a few drops of hot sauce
Make the Hollandaise sauce. Melt butter in a double boiler over simmering water (low heat). Beat egg yolks well and add to butter, stirring constantly with a wire whisk or wooden spoon. Gradually add coffee. Cook, stirring constantly with a wire wisk. Add hot sauce and salt. It the sauce is too thick, add more coffee.
Fry 2 slices of green tomatoes. Dredge pre-seasoned with salt and pepper tomato slices in eggs and then dip in cornmeal. Or, you can make a favorite batter and dip them in that. Fry on medium heat until golden brown. Toast the muffins and place side up, side by side. Fry the slices of sliced ham. Top each half of muffin beginning with the ham, then the tomato slice, followed by the egg, then drape the sauce on top of that. May sprinkle with paprika, if desired.
