This is a good one to serve over homemade baking powder biscuits!
1 pound pork sausage
2 tbsp onion, chopped
6 tbsp flour
4 cups milk
1/2 tsp rubbed sage
1/4 tsp salt
dash hot pepper sauce
In a skillet cook sausage and onion till sausage is not pink any longer. Drain but reserve 2 tbsp of the drippings in skillet. Stir flour into drippings till blended. Cook and stir till light golden brown. Gradually stir in milk and seasonings; bring to a boil and cook and stir about 2 minutes or till thickened. Serve. Makes about 4 cups
