Cucumber Onion Salad
1 cucumber, peeled and sliced
1 onion, sliced
Vinegar
1/4 cup sugar
I a small bowl place the cucumber and onion slices. Pour enough vinegar to cover the veggies. Sprinkle the sugar over the vinegar and stir as much as possible. Let sit for 8 hours until the flavors marry.

Do you think apple cider vinegar would work in this recipe?

I have actually never tried it with the apple cider vinegar. If you do try it, let me know how it turns out.

I think I will try it and see. Just checked on my cucumbers today, I have burpless, just regualkr type aslo and some lemon cucumbers growing. So if they continue growing as well as they are right now we'll be eating them everynight!

What are lemon cucumbers? I have never heard of them but gee they sound good. I like cucumbers but I love lemons.

They are the cutest little things! They look just like a lemon; shape and even the color! But the taste is of a regular cucumber; they grow on a vine just the regular ones too.

My Grandma used to make these with Apple Cider vinegar all of the time!
They were sooo good with fresh picked cucumbers.
My Mom and Grandma also sliced up cucumbers and onions and topped with sour cream & a little black pepper. MMM!!!

I don't know if the others can get it in their stores, but I have never seen them in any store I've been in. I use regular cucumbers in my recipe. These are so nice to have in the summer too!

I've never seen them in any grocery either. In fact the first time I'd seen the packet of seeds for them was when we moved here in the middle of no where. I get the seeds at a farm supply store, and they usually sell out quite quick. This one particular store has a section of seeds that are all quite unusal. If you do a search under "lemon cucumber" you might be able to find some near you posssbily.

I asked DH about this because he is a big gardener and paws his seed catatogs all year round. He hadn't heard of them either. So, I looked them up. They are considered heirloom cucumbers. That is probable why we never heard of them. It may not be in every catalog.

I looked them up. You can get the seeds from Amazon but not the cucumbers. They do look like lemons. But the thing said they don't taste like lemons at all. So if I ever go to Indiana I'll stop in at cat lovers house and get a lemon cucumber lol.

We'll be waiting for you! Just be sure to let us know when you are coming, so I can lock up the dogs, unlock the gate, and if it happens to be winter time just be sure it isn't snowing or you'll never make it up to my house! LOL

That is why we only have 4 x 4's and high ones! We always have to go pick people up! LOL Some won't even come up my drive in the good weather!

Sounds like you have a really steep drive Cat lover. Know what you mean though, when we lived on the mountain for 5 years we never did had company. No family came from Texas and I usually met my friends in town or just went to their house. Now that we are back in town my friends are wanting to come see the new house and I reckon family will come back to GA again. I would love to get snowed in, of course in Georgia when it snows just a little bit we are all snowed in but I mean like a freak of nature where we got like 3 or 4 feet of snow and no one could go anywhere for days, where we lost the electricity and piled blankets on one floor and everyone slept there and we played games and read stories by candle light or oil lamps. That, (getting even a little snow) doesn't happen to often in GA but I love it when it does.

Yes our drive is 1/2 mile long uphill! It is our drive alone that causes us most of the time to be snowed in! Usually for 2 weeks at a time!

I have to laugh at that one because we have a 8 x 10 walk in pantry that is bulging at the walls! We keep a "miniature grocery" filled at all times. In between the snow in the winter and then the gas prices just to go out we try to not have to "shop" much. We only have one grocery in town and that is a 20 mile round trip. To get to a regular shopping town we have to go 120 mile round trip. There is one a tad bit closer (34 mile round trip) that does have a walmart and that's it. One other 60 mile trip, so that is why we have our own little" grocery" Another reason a list is os important! When we travel to shop we pass so many Amish in their buggies and I'm just grateful I can get there and back faster than an all day trip! LOL

We lived in an area like that once. We had a local "store" that was like a large convenience store. The owners were crooked and got caught more than once over charging for taxes. Their prices were really high too. We would make the 3 hour round trip 2 times a month to get grouceries in the big city.

We don't schedule our grocery trips in the BIG city; we just go into them when we are there for doctor visits or have to make a mom trip or something else. That is where my big pantry has come in very good because we can just pick up a few things things here and there on sale to keep it supplied. I rarelt have to pay full price for anything!

We had to schedule our trips due to DHs and kids schedules. Plus I did not want to buy groceries in the town we lived in and spend 3-4 times the amount.
