I think that this one sounds so good. I haven't tried it yet, though.

Crockpot Meatball Taco Soup
INGREDIENTS:

16 oz. pkg. frozen Italian meatballs
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 (14 oz.) cans ready to serve beef broth
16 oz. jar salsa or picante sauce
1 Tbsp. chili powder
1/4 tsp. ground cumin
1 cup ditalini pasta
2 cup shredded Cheddar cheese
1/4 cup sour cream
1 Tbsp. chopped fresh cilantroPREPARATION:
Combine meatballs, onion, green pepper, garlic, beef broth, salsa or picante sauce, chili powder, and cumin in a 3-4 quart crockpot. Cover and cook on low for 5-7 hours. Add pasta and seasonings, stir well, cover, and cook on low an additional hour or until pasta is tender.

Yum-yum; it does sound good! If I make some turkey meatballs DH can give it a try!

Alidi stores sell really good turkey meatballs for the times you dont have time to make your own.

Oh thanks, there is one of those in Louisville, I'll have to check out the fat content of theirs! A lot of times I can't even use the turkey prepared stuff because it isn't made with turkey breast. A lot of the turkey items you see in the stores will have more fat than ground round because they use dark meat as well as the skin. So many people think they are eating low fat because it is turkey and just aren't aware of that. But thanks again and I will check it out.

I forgot that you are needing low fat. I started eating these when I was low-carbing. :o
