Here is what we had tonight:- Beef burgers
Lamb kofta kebabs
Organic sausages
Cajun chicken strips
Tri-colour coleslaw
Satsumas

I'd love the recipes for some of the previous posts...what is a milk cone and what goes into slushy punch?

Ice milk is a lower fat ice cream, frozen yogurt would be as close.


Here is the recipe for the punch, it is really good!

Slushy Punch

10 oz frozen Strawberries
7 cups Water
12 oz frozen Orange Juice
2 cups Tea
12 oz frozen Lemonade
1 1/2 cups Sugar
3 cups Light Rum


Mix all ingredients together and freeze. Serve when slushy; and adding 7-up is good too. ( You can leave out the rum if you prefer, but it will freeze up more without the rum)

Barbecue chicken or burgers (sometimes both)
Potato Salad
Baked Beans
Deviled Eggs
Watermelon
Homemade Ice Cream
Cold drinks (coke, sprite, DP)

snowmoon what is Satsumas? Never heard of it, but I bet it is good and maybe sweet???

DH built himself a smoke cooker years ago & likes to smoke chicken & ribs.
I fix the usual sides; potato salad, corn on the cob, sometimes baked beans. Once in awhile will fix pasta salad or fruit salad, or a jello molded salad. Usually I broil some yummy garlic cheese bread to go with the meats & sides.
Don't do too much dessert fixing in the summer, neither of us need the extra sweets. Ice cream &/or watermelon for the kids.

DH cooks burgers in the smoker too, really good that way!

Oh, I never thought of cooking burgers in a smoker, I bet those taste really good! We don't have a smoker, but someone gave us an old; really old kitchen wood stove. I've toyed with the idea of making a smoker out of it!

Momperson, too don't fix desserts in the summer. I usually only make them for holidays. I can't have sugar, even when I am not dieting and DH is an ice cream junky! LOL

Tonight we are grilling out since it is so hot out and cooking inside this RV makes is misierable inside. We like to cook either steaks or hamburgers. I am making veggies in foil and an added baked potato for DH.

Every summer I smoke as many briskets as I can get my hands on since I don't have a smoker when I am in this RV during school times.

Here's a nice company summer menu to have out under the cool trees!

Chilled Poached Chicken Breast seasoned with Lemon Pepper

Black Eyed Pea Salad

Gingersnaps

Lemonade




Black Eyed Pea Salad

One 15 oz can black eyed peas, rinsed & drained
1/4 cup green onions, sliced thin
1 medium jalapeno pepper, seeded and chopped fine
2 tbsp olive oil
2 tbsp red wine vinegar
2 tbsp water
1 tbsp fresh basil, snipped
1 tbsp lemon juice
1/2 tsp pepper
2 cups tomaotes, chopped
In a large salad bowl stir together peas, onions, and jalapeno peppers. Combine next six ingredients in a jar with a tight fitting lid and shake to combine. Pour over black eyed pea mixture and stir to coat. Cover and chill salad 2 to 24 hours. Just before serving add tomatoes. Makes 6 servings

Yes, just click onto the link for Texas Brisket. The biggest deal, in my opinion, is to smoke it in mesquites.

This is my favorite summertime meal, too. We do burgers or hot dogs on the grill. I make potato salad early in the day. If we're having baked beans with the meal, I don't always make deviled eggs.. sometimes it's one or the other. We like "make your own sundaes" for dessert. I'm so glad that we can soon do this again! Just another couple of months! :)

Sounds good! I actually grilled out the other night; it was cold out, but the food was so good once I brought it into the warm house! Do you use your grill year round?
