View Full Version : Freezer to Crockpot recipes

HI! have you all seen the recipe (very frequently found on internet recipe sites) for bucket lasagna? BAsically, you take a humongous amount of your normal lasagna ingredients and, instead of layering in a casserole dish, you layer them in an ice cream bucket. Then you freeze, pop it out, wrap and store in freezer. When you are ready to eat, just take your round lasagna out and pop it into the crockpot and voila--lasagna!
Well, I tried this and am pleased to report that it worked very well. Now, I'd like to find other recipes for things that can go "freezer to crockpot" this way. I'll probably use some of my own tried n true recipes (enchiladas, cheese grits, etc.) but I was wondering if anyone else has any "freezer to crockpot" recipes or ideas?

I have never heard of this before. When you made yours, did you undercook the lasagna noodles a bit so they dont turn mushy when reheating it?
How long did it take to "cook" the second time in the crockpot?
I love this idea! I hope that you get more responses to this!

When I assembled the lasagna, it was with uncooked noodles. I found the recipe just doing an internet search for bucket lasagna. I'll try to find the link and post it. It was really just a method. It suggests using uncooked noodles but being sure there is sauce on the bottom of the bucket so the noodles are covered. I did have one stray noodle at the bottom of the crockpot that stayed tough but that was it. I cooked it for 4 hours on high (about 300 degrees). The only thing that got on my nerves really was just the difficulty of fitting lasagna noodles in a round bucket. I just broke each noodle into 4 pieces and made a circle of noodles around the edge with one in the middle. I also tried one using macaroni noodles instead of lasagna noodles. We will be having that for dinner tomorrow night. I wanted to try that because I have tons of macaroni to use up and it seems easier than breaking up lasagna noodles!

When you say macaroni noodles....do you mean egg noodles that are flat or something else?

Did you thaw the lasagna overnight or just pop it in the crockpot frozen?
Soup or stews would work well I would think but not sure if you should that overnight in the frig.

hmmm, I've never seen crock pot covers. I'll have to look next time I go to the store.
to post an update, the "lasagna" made with elbown macaroni in place of lasagna noodles turned out fine. There were a few (On the very bottom) that were a little tough (almost like they were too close to the heat) but overall it was great. I got ingredients to make another big batch of lasagna--this time without the meat for my meat-phobic girls and with macaroni noodles so I can use up the surplus I have!

Thanks for posting the results Jenny. I have seen these crockpot liners on commercials with those Reynold's foils ladies. One is having to scrub and scrub her crockpot and the other just tosses the liners and is done. I hope that helps those who are trying to find these liners for the crockpot.

I never thought of using those liners for that purpose. Great idea if it works! I laughed when I first saw the commercials for the liners because I thought that it was just other useless product. Now, you have shined a bright light on these if they will work--and why wouldn't they if you think about it? HHHMMM........now I'm really wondering. Have you checked WalMart or someplace like that for them?

Yes, and I have tried Albertson's. However, things take forever to get to this neck of the woods. I have noticed that new products start on the east and slowly make its way toward to west. My Bobby made 2 boxes of Cheerios several weeks ago and it still hasn't made its way through the midwest. So, I guess I'll have to wait for several things. LOL

I cook frozen whole chickens in the crockpot all the time. As long as you have a crockpot big enough for the whole thing to fit into it works great! All you have to do is drop the frozen chicken into the pot and cook on Low all day OR you can cook on high a couple of hours and then turn it down. As the chicken cooks it develops its own liquid. I do remove the inards before I freeze it and also have put whole chickens in with a marinade and then freeze it so as it cooks it gets seasonings. You can also put a rub on the chicken before you freeze it.

I've used them as a liner to help in cleanup (like in the ads) and really liked them. My crockpot was so clean, I only needed to clean the lid and wipe the outside of the crockpot itself. As I have always HATED scrubbing a crockpot, I would highly recommend them.

Lizzie, thanks! I also hate to scrub the crockpot. I do almost all crockpot cooking or outdoor grilling in the summer since I moved to Cruces to finish my BA. This RV gets sooooo hot inside, even with the AC on. The crockpot doesn't make the place as hot as the oven does. I cannot wait until I find them in the store now!
You might be able to use saran wrap to line the crockpot for the frozen lasagne. Pack in all your stuff, freeze, then pull it out of the pot when it's solid and wrap it better or bag it. Not sure if you would be able to get the wrap off the frozen block.
Maybe a ziploc bag would be better....

I freeze the lasagna in an ice cream bucket and when it's frozen, pop it out of the bucket and wrap in saran wrap until I'm ready to use. The saran wrap comes off very easily then when I unwrap to put it back in the crockpot.

an update on freezer to crockpot meals...
I've successfully done both lasagna and tater tot casserole. We prefer the lasagna made with macaroni instead of traditional lasagna noodles. that probably means it is something else instead of lasagna but we still call it lasagna! The tater tot casserole was super easy to put together (this is the one where you layer ground beef, then cream of mushroom soup, cheese and then tater tots) and turned out well. My first reaction was, well, the tater tots are falling apart and not crispy so maybe I won't do this again but the kids LOVED it. My kids are pretty particular but they liked the soft tater tots. So, I would say that one is a qualified success--depending on how you prefer your tater tots. I will keep doing it since my kids liked it.
My current experiment in the freezer is chicken enchiladas. I put them together yesterday (basically a layer of cut up corn tortillas, a layer of creamy chicken mix, a layer of cheese and then repeat) and we will have one for dinner tomorrow night. If anyone wants any of these recipes, I am happy to post them. I am going to keep going through my crockpot recipes and look for ones that could be assembled in advance and frozen. take care all!

Thanks for the update. I have to do a lot of crockpot cooking in the summer because it gets so hot. My DH doesn't like lasgana, but he does like spaghetti and meatballs or meat sauce. So, I am guessing that I could make yours and call it that and he'd never know because it won't have lasagna noodles. lol

This is the original recipe that I got from one of my favorite cookbooks. I modified it only by omitting green chiles/olives for my picky kiddos (hubby and I can add those after cooking) and I used canned broth in place of the water/bouillon cube. I made three the other night using 2 1/2 pounds boneless chicken (which turned into 5 cups cooked and diced); 16 oz. shredded lowfat cheese, 5 cans of FF cream of mushroom soup; and the amounts were about right. I assembled them all in ice cream buckets, froze and then wrapped in plastic. We're having one for dinner tonight. Since this started out as a crockpot recipe and It's all ingredients that are normally freeze-able in casseroles, I expect good results but I will post afterwards to let you all know.
Mexican Style Tasty Goop
from “Crock-It” by Barbara Murray-Neslen
2-3 cups cooked, diced chicken
1 onion, diced
2 cans cream of mushroom soup
¼ cup margarine
2 cans(4 oz) chopped green chiles
1 chicken flavored bouillon cube
1 cup hot water
6 ounces cheddar cheese, grated
12 corn tortillas, cut up into bite size pieces
spray crockpot with non-stick cooking spray. Saute onions in margarine until soft. Add chicken, chiles, bouillon, water, and soup.
Layer: ½ tortillas, ½ chicken mix, ½ cheese. repeat
Cook on low 6-8 hours. Stir well and serve with sour cream

Tator Tot Casserole
1-2 pounds hamburger—pat into the bottom of 9 x 13 pan
sprinkle lightly with chopped green pepper and onion
Pour over 1 can of cream of mushroom soup mixed with one can of milk
Cover with grated cheese
Place 2 pounds tator tots over
Bake 45-60 minutes at 350 degrees. This can be frozen before cooking or after it’s been cooked and cooled.

Above is the original recipe. When I make it in any form, I prefer to cook the ground beef first because otherwise, I find that the tater tots are burned before the hamburger is cooked. It doesn't makes such a neat square when you take it out of the pan, but it is still tasty.
So when I did this for the freezer/crockpot, I made 4, I believe. I started with a 6 pound bag of tater tots and 4 pounds of hamburger and 2 pounds of cheese more or less. This one goes together very quickly. The most time consuming part was browning the hamburger. It tasted pretty much the same in the crockpot as the oven, except that the tater tots were not crispy (but my kids liked that).

5 lbs hamburger
tomato sauce
spices as you like it.
2 large containers of cottage cheese
4 eggs
salt
pepper
a large quantity of shredded mozzarella.
2 packages of lasagna noodles
6 (one gallon) ice cream buckets or similar container
Cook hamburger, drain. Place it back in the pan, and add tomato
sauce and spices as you like it.
In another large bowl, mix two large containers of cottage cheese,
four eggs, and salt and pepper.
A third bowl has a large quantity of shredded mozzarella. Open two
packages of lasagna noodles. Place all the ingredient bowls and
pans in a row on the counter. Then take 6 (one gallon) ice cream
buckets or similar container. Layer as follows:
small amount of sauce
noodles
sauce (it is important that all of the uncooked noodles are covered in sauce)
cottage cheese
noodles
sauce
cottage cheese
noodles
sauce
mozzarella cheese to cover top
You end up with six lasagnas, and only 3 dirty pans. Freeze. Once
solid, slip from the ice cream bucket, and place in gallon Ziploc
bags. Now they go back in the freezer, taking up much less space.
I use the ice cream bucket because it makes it the exact correct
size and shape for my 5 quart crockpot. You may find another
container that works better for you.
When its lasagna eating day, just pop it in the crockpot on LOW,
and let it go all day.

Honey Sesame Tenderloin
1/2 cup soy sauce
2 cloves garlic, minced
1 tbsp fresh ginger, grated or 1 tsp. dry ginger
1 tbsp sesame oil
1 lb. boneless pork tenderloin chops, whole
1/4 cup honey
2 tbsp brown sugar
1/4 cup sesame seeds
Combine first 4 ingredients in a bowl. Place tenderloin in a heavy plastic bag and pour soy mixture over to coat. Secure bag tightly. Marinate 2 hours at room temperature, or overnight in refrigerator. Preheat oven to 400 degrees. Remove pork from marinade and pat dry. Discard marinade. Mix together honey and brown sugar in a shallow plate. Place sesame seeds on a separate shallow plate. Roll pork in honey mixture, coating well. Then roll in sesame seeds. Place tenderloin in a shallow roasting pan and roast about 25 minutes per 1 lb, until a meat thermometer reads 160 degrees. Remove to a serving plate and slice thin.
If you wish to freeze cooked meat: Cool quickly in refrigerator to retain freshness. Leave meat whole or slice and place the amounts you will use at one time in freezer containers that will fit your crock pot or on sheets of aluminum foil and seal tightly. Freeze up to 6 months. To reheat:Place in yourcrcokpot and heat according to the time you have; this works well on low for a longer time. Serves 4

Love the lasagna recipe...I am sitting here thinking and thinking...what can I use that I already have to shape the lasagna? This would be super handy for me since about 5 times a year I have my whole family over for celebrations and my sis is vegetarian. I usually go and spent $10 on a veggie lasagna each time (because I just don't feel like cooking something just for her and other certain MALES in the family think that a meal without meat is just a snack!!). Hmmmmm.....I need to check containers in my cupboard. In the meantime....I was looking for a crockpot thread (have an excellent Chocolate Fudge Pudding Cake recipe I just tried yesterday -- can we post regular crockpot recipes here too or is there somewhere I'm missing?

If you have a round crockpot the plastic gallon ice cream buckets work well.

Recipes that can be all thrown into one bag and frozen and then dumped into a pan or a crockpot and cooked are often called dump recipes.
Here is one to try
Creole "Dump" Chicken
-= Ingredients =-
1 tablespoon olive oil
1/4 cup chopped onion
1/4 cup bell pepper
1 clove garlic -- minced
14 ounces whole tomatoes -- ; (chopped and undrained)
2 teaspoons worcestershire sauce
2 teaspoons red wine vinegar
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon tabasco sauce
1 1/2 pounds chicken pieces
-= Instructions =-
For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a large baking dish, turn chicken to coat. Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed. Place the Bag on a shelf furthest from the freezer (It works best if the bag is laying flat,although this may not be the best option with a side-by-side fridge/ freezer). Preheat the oven to 350 F. Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30minutes for chicken breasts).
BTW I found the crockpot liners and have one in my crocpot right now. I have a feeling I am going to love using them!

Spaghetti Pie
Serving Size: 6
-= Ingredients =-
6 ounces dry spaghetti ; (we used angel hair pasta)
2 tablespoons butter/margarine
1/2 cup parmesan cheese
2 well beaten eggs
1/2 pound ground beef
1/2 cup chopped onion
1 8-ounce can italian stew tomatos undrained
1 6-ounce can tomato paste
1 teaspoon sugar
1 teaspoon dried oregano ; crushed
1/2 clove garlic ; minced
1 cup cottage cheese
1/2 cup shredded cheese your choice
-= Instructions =-
Cook noodles. Drain. Stir in butter until melted (you need a large bowl for
this step). Stir in parmesan cheese and beaten eggs. This mixture will
become thick and sticky! Press into a buttered 9-inch pie pan as your
'crust'.
In skillet cook ground beef and onions. Drain. Add undrained stewed tomatos,
tomato paste, sugar, oregano and garlic. Simmer while doing the next step.
Spread cottage cheese over the bottom of the 'crust'. Top with tomato/meat
mixture. Sprinkle with shredded cheese. Cover with foil and freeze.
Serving:
Thaw 24 hours in fridge. Bake covered 350 degrees for 25 minutes. Remove
cover for 5 additional minutes or until cheese is lightly browned.

Mexican Bake

4 -6 flour tortillas
can ; of blackbeans
can ; of rotel
can ; of kidney beans
1/4 teaspoon cumin
1/8 teaspoon chilli powder
-= Instructions =-
browm meat, drain, in a large pot add everything but
tortilla and cheese, bring to a boil simmer for 5 min.
in a freezer ready pan, put a small amount of meat
mixture in the botom, top with tortilla, then meat
mixture, then cheese, and repeat until its all gone!!
when your ready to eat it pop it into the over , when
the cheese is melted, its done!!!!

Donna, Rotel is a brand of canned tomotoes that are spicy as they have onions and chilis in them. You can take a can of diced Rotel and 1 pound of Velvetta and melt them together in the microwave. It makes the BEST queso. For parties, I dump several cans and several boxes of cheese in the crockpot for people to scoop it out of and use with corn tortillas.

Nell, I have seen people add cooked sausage to their queso before. I myself don't usually do it though. I always keep the ingredients around for my DD as she could live on it. lol
I am adding a can of the regular and one can of the extra hot to my pinto beans for tomorrow's dinner. I have the beans in the crockpot as I type this. I love tomatoes in my pinto beans.

For me it is the hotter the better. I still have to cook my cornbread when I get home from school. Beans taste better when served over cornbread.

I use the mild rotel also, even though the hotter the better, to me. But my DH cant eat anything hot or real spicy.
I've never had tomatoes in my pinto beans. I'll have to try that sometime!
BTW Big lots and some of the dollar stores here have Rotel tomatoes for 49 cents a can, if anyone has one nearby and wants to stock up! I bought $8 worth already and am hoping to go back and get more.

Yummy, I'll have to check out those dollar type stores. I could live on tomatoes, whether they are canned, fresh, or whatever. I love hot things too. Thanks for the heads up.

Oh I'll have to check out Big Lots too next time we go to Jasper. Sav-A-Lot also has them, but they are a generic version, but just as good!

I use the mild rotel also, even though the hotter the better, to me. But my DH cant eat anything hot or real spicy.
I've never had tomatoes in my pinto beans. I'll have to try that sometime!

Aldi's has them too. They are spicy---and believe me, they range from hot to SUPER hot. I use a can in chili once in a while.
I'll have to look for those tomatoes. I don't recall seeing them around here. It may be a regional thing.

I have seen them discussed on the Foodnetwork, so I imagine that you have them in your little state. Look on the isle where the canned tomatoes are located. They are to die for.

They say they're like the Reynolds liners.

I've seen alot of your posts on recipes!!
Do you have a good recipe for a white/cheese/w/meat and not too hot, but mild and i know some baseball parks use a mexizcan I know of some here in TN, but have no way of getting ahold of anyone that makes this recipe!! I do kinow it has sausage & a somewhat spicey white cheese (not sure of what kind) This chesse/dip was ser at the Nashville/sounds/games!
But someone did make it and us trying to think of what is in it, LORD help us!! Some days I feel like my mind went on vacation!

1 pound hot pork sausage ,cooked & crumbled
1 cup White American cheese,shredded
4 oz jalapenos, chopped & drained,
1/4 cup half & half
2 tbsp onion, finely chopped
2 tsp ground cumin
1/2 tsp salt
Cook sausage till done, drain and crumble then add to rest of ingredients. Heat all over a low heat till cheese is melted, stirring constantly. Serve warm with tostaditas. Makes 1 1/4 cups
Hope this is what you were looking for. The cheese is available in several different groceries; sometimes you can buy it already shredded, but other places only have it in the block and then you vjust shred it yourself. Enjoy!:D
