I saw this on Rachael Ray's show. I made this the first time I ever had jimica.

Heck of Jimica Salad1 medium jicama root, peeled and sliced into thick matchsticks
1 teaspoon salt
2 teaspoons sugar
2 limes, juiced
2 hearts romaine, chopped
2 tablespoons chopped cilantro leaves, a handful of leaves, finely chopped
1/2 teaspoon ground cumin, eyeball it in the palm of your hand
3 tablespoons extra-virgin olive oil, eyeball it
Freshly ground black pepper

Place jicama in a bowl, sprinkle with salt and sugar, and add the juice of 1 lime. Let jicama stand 15 minutes. While jicama softens, work on the rest of your meal.
Arrange romaine on a serving plate. Top romaine with jicama. Juice 1 lime into a small bowl, add cilantro and cumin. Whisk in extra-virgin olive oil in a slow stream. Pour dressing over salad and season with salt and pepper.

After hearing all of the hype about Jicama, I couldnt wait to try it. I didnt like it as much as I had thought I would, maybe because I just wasnt sure what I was eating. lol! :p

This item is still very popular though!

I don't think jimica has much flavor, but the plus side is that it has a wonderful crunchy texture and you can flavor it any way you want.

That's probably why I dont like it .....I dont like water chestnuts either.

I LOVE chestnuts and other crunchy things. However, I know that texture is everything. My DD won't eat corn and peas because they pop in her mouth. LOL

My kids and hubby wont touch peas and sweet potatoes because they get mushy in their mouths. :rolleyes: I keep telling them that they dont know what they're missing. ;)

Can you describe the flavor of a jimica? I've seen them in the grocery,but never bought any because I was unsure of how to cook it.

I think it has a slight sweet flavor. The only thing that I personally could compare it to is an apple, which is sweeter and not as hard. I hope this helps. I have never cooked with it as I have only eaten it raw.

Well, that's enough I guess then for me to buy some and give it a try....next time we go to the big city where they have such things! LOL

I like it because it adds a crunch to food too.
