i have a regular recipe for HONEY HERMITS which i got from the Internet;.

here it is.

1/3 cup butter
1/2 cup milk
2 eggs, beaten
1/2 tsp cloves
1/2 tsp cinnamon
1 1/3 cup honey
1 cup raisins
1/2 tsp salt
4 tblsp baking powder
3 1/2 cups flour

cream shortening and honey, add eggs,add milk,salt and raisins.mix well.sift and mix dry ingredients together then mix into liquid ones, ,drop by spoonsful onto greased pan.bake in moderate oven until brown.


i am using plain unbleached white flour..
i would like to get a chewy, somewhat tender 'hermit' cookie.

my questions:
#1. can i use buttermilk powder and water..will this make a more tender hermit.?

#2. how would i adjust with baking soda.?
i thought that if you used honey , you needed to use 3/4 tsp baking soda per cup.? ( i read that as a fact in 'baking with honey as an ingredient')

#3. could i roll this whole mixed bunch of ingredients into a roll and freeze and cut like you would frozen sugar cookies?or if you use baking powder and baking soda, do you need to use immediately so that it will rise well?

#4. i may use a mix of honey and molasses.
will this change anything.?

I'm not an expert but will try to help!

1. buttermilk powder reconstituted should work fine in place of the regular milk
2. the baking soda adjust would be only if your recipe calls for baking soda and since it does not I wouldn't worry about that
3. i don't think this recipe will "roll"
4. molasses is going to be generally much sweeter, I wouldn't try to mix the two in the one recipe

ok.. you have me braced up and ready to give it a try.. Thank you for your tips..
i really appreciate input from people who have good sense about baking (usually comes from experience)..

will let you know how they turn out..
i need to purchase some raisins.. i have the rest of the ingredients..

I believe the thread DeBora is talking about is here on MomsMenu, it is just a thread that you can tell all about yourself. If you go down to the forum jump and scroll through it you will find one titled "Introduce Yourself"; that is the one she is talking about. And yes, there is a sister site called FamilyCorner; that one is about all different subject matters whereas MomsMenu is all about food. Glad to see you again!

Sorry if I missed you on the welcome thread here at MM. Yesterday was race day at my house and I get pretty crazy. LOL A thousand pardons. I may have met you at the FC introduce yourself forum though. Introducing yourself is just an option too.
