Hearty Black Bean Soup
3 medium carrots, shopped
2 celery ribs, chopped
1 medium onion, chopped
4 minced garlic cloves
1 (30 oz) black beans, rinsed and drained
2 (14 1/2 oz) cans chicken broth
1 can (15 oz) diced tomatoes
1 1/2 t dried basil
1/2 t dried oregano
1/2 t dried oregano
1/2 t ground cumin
1/2 t chili powder
1/2 t hot sauce
4 cups cooked rice
In a crock pot, combine the first 12 ingredients. Cover and cook on low for 9-10 hours or until vegetables are tender. Serve over rice.
