This makes a nice change of pace from the regular types of omelets!
1 8 oz can tomato sauce
2 oz mushrooms, sliced
1 tsp Italian spice mix
1/2 tsp oregano
1/2 tsp sweet basil
6 large eggs
salt and pepper to taste
4 oz mozzarella cheese, grated
4 tbsp butter
Combine first five ingredients in a saucepan and simmer 15 minutes. Beat eggs and add salt and pepper, then the cheese. Melt butter in a skillet on low heat. Pour egg mixture into skillet and cook till the edges are brown. Fold omelet over and cook till set. Pour the sauce mixture over individual servings of the omelet. Makes 4 servings
