6- 8 oz each salmon steaks
1/4 cup olive oil
1/4 cup dry white wine
1/4 cup lemon juice
3 tbsp Dijon style mustard
1 small onion, chopped
2 cloves garlic, finely chopped
salt & pepper to taste
Put salmon in a single layer in a large shallow glass dish. Combine oil and wine, lemon juice, mustard, chopped onion, garlic, salt, and pepper in a bowl and mix well. Pour over the salmon and turn the salmon in the mixture to coat well. Cover and refrigerate salmon for 3 hours, turning once during that time. Prepare the grill so the coals are hot. Drain salmon, but reserve the marinade. Put the salmon on the grill and brush with reserved marinade. Grill the salmon about 4" from the heat. Turn the salmon only once and brush with the marinade. Grill for 5 minutes longer or till the fish flakes when tested with the fork. Makes 8 servings
