I make breakfast burritos for the week, every weekend. I am too busy during the week to cook breakfast. What are other ideas for make-ahead breakfasts that are appetizing and filling?

What about some muffins, or coffeecake? Also some of those breakfast casseroles of which there are endless varieties! Any of these can be baked ahead of time and if you want them warm, just a serving size reheated in the microwave. Oatmeal packs that you make yourself with all the ingredients you like put into snack size ziplock style bags can be quick to throw in the microwave into a bowl with water. Biscuits can be made ahead, precook sausage and bacon and the night before assemble some biscuit sandwiches, bagels and cream cheese or your favorite topping, do an instant breakfast milk shake one morning per week with a piece of fruit like a banana, or an apple. Even a peanut butter and banana sandwich! Hope some of these might workl for you!

I like the casserole idea, even though I would have to make the small casserole since I have an RV oven. However, I prefer protein in the morning as I limited in my sugars and carbs due to low blood sugar.

When I make pancakes or french toast, I often make extra and freeze them in individual servings for a quick breakfast and if you want added protein, bacon can be cooked in a microwave or toaster oven very quickly. I also like granola mixed with lowfat vanilla yogurt (which provides calcium and protein). Often, too, I will eat maple & brown sugar cream of wheat with two pieces of whole grain peanut butter toast. My doctor told me to eat protein with every meal which keeps you from being hungry so soon and it does work.
