12 eggs
1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1 pound (4 cups) Monterey Jack cheese, shredded
3 cups small curd cottage cheese
1 stick butter, softened
4 oz fresh green chilies, seeded, chopped OR
1 can (4 1/2oz) chopped green chilies, drained
1 - 2 oz jar chopped pimiento, drained
1 - 7 oz can whole kernel corn, drained
Heat oven to 350 degrees. Butter a 13 x 9 x 2" pan. In a large bowl beat eggs till light. Add all remaining ingredients and mix well. Pour into prepared dish. Bake 45 to 55 minutes or till puffy and brown. When knife inserted in center comes out clean it is done. Serve hot. Makes 12 servings
