View Full Version : Roast Pork with Potato Dumplings and Kraut

2 cups diced lean cooked roast pork
3 1/2 cups Bavarian style sauerkraut, drained
2/3 cup instant potato flakes
3/4 cup all purpose flour
1 1/2 tsp baking powder
2 tsp dried parsley flakes
1/3 cup dry milk powder
1/3 cup water
1 egg

In a large saucepan combine pork and sauerkraut. Cover and cook over medium heat for 10 minutes stirring occasionally. In a large bowl combine potato flakes, flour, baking powder, parsley flakes, dry milk powder, water, and egg. Mix well to combine. Let set about 3 minutes. Using 1/4 cup as a guide drop batter into hot sauerkraut mixture to form 4 dumplings. Recover and continue cooking 10 minutes or till dumplings are firm. For each serving put 1 dumpling on a plate and spoon 1 cup sauerkraut mixture over the top. 4 servings
