1 (12 oz) pkg frozen cooked winter squash
1 cup chicken broth
1 T fresh or dried snipped chives
1 t crushed thyme
1/4 t pepper
1/2 cup pear or apricot nectar

In a medium saucepan, combine squash, broth, chives, thyme, and pepper. Bring to a boil. Reduce heat, cover and simmer for 8-10 minutes or until smooth, stirring occaisionally. Stir in nectar. Reheat.

Does this soup have a "sweet" taste to it because of the nectar?

I don't think it does. I think the thyme counters the necter. But, I LOVE squash, anyway you cook it. LOL

If you are talking about yellow or crockneck squash, you betcha. As far as the others, I haven't tried them. But, if you do, let me know. :)

Yes, yellow squash is mainly what I was thinking about, but I guess zucchini would work also. We have lots of both growing in the garden this year and if the squash borers don't get it we should have squash coming out the ying yang!

I cannot wait for my DH's garden to start producing fruit. He grows me crockneck squash and spaghetti squash as well as other decilicious veggies. He doesn't even like most vegetables.

My biggest problem is that I can't wait for DH's tomatoes to turn red because I love fried green tomatoes so much!
