1 cup sugar
1/3 cup margarine, softened
1 tsp vanilla
1/2 tsp peppermint extract
3 egg whites
2/3 cup all purpose flour
1/2 cup baking cocoa
1/2 tsp baking powder
1/4 tps salt
Chocolate Glaze (recipe follows)
2 tbsp crushed hard peppermint candies
1 qt vanilla fat free frozen yogurt
Heat oven to 350 degrees. SPray an 8 x 8 x 2" pan with nonstick cooking spray.Mix sugar, margarine, vanilla, peppermint extract, and egg whites in a bowl. Stir in flour, cocoa, baking powder, and salt. Spread in pan. Bake 20 to 25 minutes or till toothpick tests clean. Cool completely. Prepare Chocolate glaze and spread evenly over brownies. Sprinkle with candies. Cut into 2" squares. Serve with frozen yogurt. Makes 16 brownies
CHOCOLATE GLAZE

2 tbsp baking cocoa
1/4 tsp vanilla
3 to 4 tbsp hot water
Mix all ingredients till smooth and spreadable.
Per serving: 4 g fat - 1 g saturated - 0 mg cholesterol - 130 mg sodium - 36 g carbs - 1 g dietary fiber - 3 g protein
