My mil's birthday is coming up Thursday the 9th.It'll be her 81st birthday so I like to fix a special cake but she is a diabetic.Anyone have any suggesations or recipes for one.She likes any kind of sweets.Thanks!

Sweetnell, I have several recipes I have tried for low carb that can work for a diabetic also. Just be sure the ingredients are okay for her. I have to watch my carbs now because of high gluose levels so I use mostly low carb recipes but some diabetic work for me as well. You may have to get some of the special ingredients listed here, but it is a good recipe. Doesn't need frosting which wouldn't work anyway for diabetic! This is a dense type snacking cake, but good when you want something "sweet!

Chocolate Birthday Cake
1 cup ground hazelnuts (health food store should have this; sometimes called flour and or meal- you can grind your own hazelnuts but if you do you have to use one of those coffee bean grinders to get it the right consistency)
1/2 cup vanilla flavored whey protein powder ( the same stuff they make protein shakes from - you can get this in a health food store also, and they have small packets so you don't have to buy the large can)
3 tbsp unsweetened cocoa powder
1 tsp baking soda
1 cup splenda
1/2 tsp salt
5 tbsp canolla, peanut or sunflower oil
1 tbsp cider vinegar
1 cup cold water

Preheat oven to 350 degrees. In a bowl combine hazelnuts, protein powder, cocoa, baking soda, splenda, and salt and stir together. Make sure the baking soda doesn't lump). Spray a 9 x 9" baking dish with nonstick spray and put the combined ingredietns in it. Make two wells in this mixture. Pour the oil into one and the vinegar in to the other and the water over the hole thing. Mix with a fork till all combined. Bake for 30 minutes. Makes 9 servings with each 7 g carbs, and 1 g fiber

Thanks cat!Not sure if I can get the special ingredeints at this time but will most defintely try this in the future gatherings.

Sweetnell, you may find something on splenda.com that wouldn't use the special ingredients like mine above does. I haven't tried any of them so don;t know if they have some or not, but I bet they do! Good luck!

Angel food cake is what most diabetics around here eat.
